Creamy Tomato Soup Recipe
Creamy tomato soup is the perfect comfort food on a cold day. It's easy to make, delicious, and can be served as a starter or main course. In this post, I'll share my recipe for creamy tomato soup and show you how to make it from scratch.
Ingredients
- 2 tablespoons of butter
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cans of crushed tomatoes
- 2 cups of chicken or vegetable broth
- 1 teaspoon of sugar
- 1/2 teaspoon of dried basil
- 1/2 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of heavy cream
Instructions
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and sauté until the onion is translucent.
- Add the crushed tomatoes, chicken or vegetable broth, sugar, basil, oregano, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes.
- Using an immersion blender, puree the soup until it is smooth.
- Add the heavy cream and stir until it is fully incorporated.
- Let the soup simmer for an additional 5-10 minutes until it has reached your desired consistency.
