Instructions

  1. Heat 1 liter of full-fat milk in a pot over medium heat, stirring occasionally to prevent it from sticking to the bottom.
  2. Once the milk comes to a boil, turn off the heat and let it cool to 43-46°C (110-115°F). Use a cooking thermometer to check the temperature.
  3. In a separate bowl, mix 2 tablespoons of curd with a small amount of the warm milk until it's smooth and creamy.
  4. Pour the curd mixture back into the pot of warm milk and stir gently to combine.
  5. Add salt to taste and mix well.
  6. Cover the pot with a lid and place it in a warm spot in your kitchen, like an oven with the light turned on or a warm cupboard.
  7. Leave the mixture undisturbed for 6-8 hours, or until it thickens and becomes tangy.
  8. Once the curd has set, give it a stir and add roasted cumin powder and chopped coriander leaves (optional) for extra flavor.
  9. Refrigerate the curd for at least an hour before serving.
